a really great knife
We have several Shun knives. All are excellent, but this knife has quickly become everyone's favorite kitchen knife. Shuns have nice balance and great looks but what sets them apart is their ability to effortlessly take a really sharp edge and hold it. Also by laminating the steel, Shun creates very stiff blades. This extreme stiffness allows the pressure to be concentrated on the edge and these knives slip through food like it wasn't there. One issue with this and others in the series is the corner of the blade towards the handle is as sharp as the rest of the blade and it is pretty easy to nick your hand if you're not careful. My wife was a bit intimidated by this at first.
