Pros: Design, Construction, Material Quality, Sharpness, Overall Quality, Durability
The Real Deal
I have several of the Shun classics in my kitchen which have chopped, diced, sliced and everything in between with amazing results and continued resiliencey. I wanted and actually needed a chefs blade so my research lead me to the reserve class. A great investment that will last me a lifetime. The blade is gorgeous! But the best part about this culinary piece of art is that its made to be used! OMG! It cuts like nothing is there which reads true with all the testamonials I have read and researched. This is the real deal! Please know that quality is sometimes pricey. I have always found that when you invest in something that your grandkids will have, that my friend is a good purchase. If you understand quality and true craftmanship this is the kitchen knife for you.I have just purchased the Chefs Choice Asian Sharpner, which hopefully will maintain the fine edge on these Shun blades. Conventional sharperners typically have the 22 degree angle whereas these beautiful blades are in the 16 degree range which allows t hem to slice with much less effort. I am waiting for that to come in so I can give it a review. If you want an amazing kithen chefs knife do not hesitate!
