Messermeister crafts blades in Seki, Japan with the same high standards used in Solingen, Germany. High quality steel alloys are attatched to the very finest handle materials and the edges are ground to the traditional Japanese razor edge.
The Messermeister 10.1/2" Sushi or Takohiki is a long, narrow, single edge blade with a blunt tip.
- The blunt tipped sashimi knife originated in the Tokyo region and allows a chef to cut cooked octopus (it curls when cooked) without damaging the uncooked section. It also is used for any straight cut sashimi and meat with skin.
