Thin, Sharp, and Well Balanced
I purchased the two piece Ontario Agilite set for my wife (Paring & Chef's knives). She says that they cut very well, and she likes the handles and the balance of the blades. The knives were designed by ABS Master Smith Dan Maragni, so you can be sure that a lot of care was put into their creation. Their is one aesthetic issue with the knives that I find a bit odd. The bolster and butt cap are made of some type of plastic with an nice amber color (Ultem?). While the shape of those pieces is fine, they are translucent, allowing the holder to see parts of the tang. Perhaps it is so that you can see that the knife has a full tang, but I would have preferred a solid color for those pieces. My wife, however, didn't mind them. As for the blades themselves, 14C28N is a Nitrogen stainless steel, which Sandvik advertises as the "Ultimate combination of hardness and corrosion resistance" having "Excellent edge performance, Very high hardness, and Good corrosion resistance" The advertising aside, 14C28N appears to be and excellent steel, but only time will tell how it holds up in actual use. -Chris
