Great Knife For Professional Line/Prep
I'm a professional line cook and I use this knife daily at work. I work in a high end restaurant where everything must be cut perfectly and this knife lives up to the task. The blade is medium hardness and holds its edge well, while still being easy to sharpen. It comes very sharp and I've had no problem sharpening it nicely. It has a nice curve to it which makes cutting very easy. Especially if you're prepping for hours on end, the curve allows you to cut with a smooth rocking motion and makes your work a lot easier. The comfortable handle also ensures your hand never hurts or gets tired even after 6 hours of cutting.The balance and ergonomics of this knife are amazing. It feels so good in my hand I never want to let go of it. The rubberized handle is very comfortable and extremely grippy. Its perfect for a fast paced restaurant where your hands might be oily or slippery but you still need to cut fast- this knife will not slip. Actually the handle is the reason I bought this knife, it's the best feature, along with the heavily curved blade.
