KitchenIQ™ developed this sharpener to fill the need of sharpening a knife back to its original sharpening angle. Why sharpen a knife to its original angle? It's important to do so, to prolong the life of the knife by removing less metal, while creating an extremely sharp edge.

KitchenIQ™ introduces the Angle Adjust Manual Sharpener. This is the FIRST adjustable sharpener of its kind. The sharpener has unsurpassed technology that allows you to sharpen the knife to the original factory angle. It includes 3 slots for sharpening. The fine slot features ceramic rods for finishing the knife edge and every day light honing and maintenance of an already sharp knife. The coarse sharpening slot features diamond stones that are used to sharpen dull or damaged knives. The serrated slot is a fixed slot designed for sharpening most styles of serrated knives. To use the sharpener simply select the desired angles and pull the knife through the slots 10 + times. (the number of pulls depends on the sharpness or damage to the knife.)

Sharpening Instructions

Both the Coarse and Fine sharpening slots will move at the same time to the selected angle.

Step 1. Push down to turn knob to the appropriate sharpening angle. If original factory angle is unknown follow suggested angles on knob. 
Step 2. Insert knife into the appropriate sharpening slot at a 90 degree angle to the sharpener.
Step 3. Using moderate pressure pull the knife blade through the sharpening slot (approximately 6-10 pulls depending on the damage or sharpness of the knife).
Step 4. Repeat until sharp
Step 5. Always finish and polish the knife in the fine slot. Also use the fine slot for regular maintenance. Pull the knife through the slot using moderate pressure (approximately 6-10 pulls)
Step 6. Repeat until sharp.

Test the sharpness of the knife by cutting a piece of paper, or slicing a vegetable. If the knife does not cut through the item easily, repeat sharpening.

Knives made of harder steel may require additional pulls.

Sharpening Serrated Knives

Pull knife through serrated sharpening slot 2-3 times using light downward pressure. Repeat process until sharp.

Warning! This knife sharpener will produce a sharp edge. Use caution when handling a sharp knife. To avoid injury handle sharpened knives with extreme care.

Smith's Edgeware sharpener is very good!
I love this sharpener, it sharpens my Wustoff 14 degree knives. I only wish they would add the honing stone to the unit also in addition to the fine stone.

New STANDART for Griptilian
I have had the cheap plastic handles Griptilian 551 and it really did feel like crap. The plastic handles had some very sharp jimping at the butt as well. The upgraded G10 handles on this model not only look EPIC but are extremely comfortable. The blue anodized barrel spacers are awesome as well. The handles fills my hand perfectly. Cannot say enough good things about except for some reason it feels like its heavy even though its a bit more than 4oz.
