2. THE EDGE: The molybdenum/high carbon stain resistant alloy blade is hand-honed to a precise 20° V-taper. It's extra sharp, extra strong and easy to sharpen.
3. THE HANDLE: Smoothed and rounded for a comfortable grip. Notice the handle is squared off at the end, this is to enable squashing or mincing of spices.
Here is how to handle your large or small chef's knives:
Be sure cutting surface is stable. Grasp the handle of the knife to the blade. Extend and place index finger along one side of blade and thumb on the other. Fingertips of free hand hold food item (to be cut) in place. Knuckles are extended to lightly touch flat of blade and act as cutting a blade. Cutting edge should never be lifted above knuckles. The blade cuts in short, shallow strokes-never sawing. Move it forward and down.
