The Ultra-Chef™ Knives in Cocobolo are classic in design and state-of-the-art in performance. Each blade is 33 individual layers of stainless steel – 16 layers per side plus the center layer of VG-10 Cobalt stainless steel hardened to a Rockwell of 60-62 (AM-UCB is 420J Stainless Steel). These knives are incredibly strong, light in the hand, perfectly balanced and extremely sharp. The handles are made from select Cocobolo, long considered one of the world’s most beautiful exotic hardwoods. The Ultra-Chef™ Knives in Cocobolo – arguably, the finest chef’s knives made today. Made to serve but an everyday pleasure
Received as a gift 5 years ago this knife is both visually and practically outstanding : first found 'too nice' to be hardly used in a working kitchen, its not : the wood handle reveal to be stabilized, proper to resist to water, acid materials and heat. I do appreciate its balance, a constant in Al Mar's knives, and its blade geometry whose allow to find a great great sharpness ( i use 3m papers, water and a flat heavy surface. Just try !). Even if you don't have time to loose dreaming on your tools in a kitchen, handling the knife is a daily pleasure, each time. You won't regret the purchase. Thanks
