For separating meat from bone cooked and uncooked. The smaller the size of the meat or bone, the more flexible the blade should be and vice versa. Always use a flexible knife on fish or delicate fowl.

Great Knife, good price, prompt shipping
This replaced a Henckels boning knife we received as a wedding present 31 years ago. I have no doubt this is the last one we will ever have to buy. The old one had a wood handle that was finally starting to deteriorate. The blade was as good as new, held its edge and only need sharpening ocasionally. I trust the plastic handle and blade on the new knife will give me as many years of use.
