Great knives!
I used this knife for vegetable prep. Perfect! Very sharp! Be careful! The one thing I would have wanted to know is that the beautiful Rosewood handle does not have some sort of a protective varnish/finish, as do my older Lamson Sharp knives.

This is my second Lamson Sharp chefs knife-the other, which is over 40 years old, is still going strong even though slightly damaged after a family member used it to cut a branch off the xmas tree (that FM is not allowed to use the chefs knife now!) It fits my hand perfectly and keeps an edge very well - my favorite knife.
