LamsonSharp 8 in Rosewood
I used this knife mainly to cut meat: chicken, pork, beef. I like the weight of it, the handle is comfortable, and it looks and feels of good quality.Things I don't like about it: 1) It isn't very sharp from factory. I had it sharpened, and it cuts much better now. 2) I wish the sharpened edge was continuous all the way to the handle rather than having a raised edge. The raised edge gets in the way of making clean cuts.I bought this knife on sale for approximately $80 dollars, which is well worth it at that price. I don't think I would of bought this knife if it cost more than $100 since there are better knife at that price.

American made traditional
I used to live four miles from the little Lamson factory in Shelburne Falls. I've been using one of these for years. This is a sturdy all-purpose chefs knife that can take considerable abuse. It is sharp enough to make paper thin tomato slices. It is heavy enough for breaking down a whole chicken. The edge doesn't chip easily and resharpening is easy. The wide blade lets you scoop diced onion off the cutting board and into the pan. The real rosewood handle is non-slip. It shouldn't be put in the dishwasher but when my sister ruined her handle that way the factory replaced it for her for free! Working with such a nice tool makes cooking more pleasurable.
