This is an American made seven inch Santoku style chef's knife with a full tang, double-sided flat ground CTS-XHP blade for ambidextrous use. The handles are black G10, a synthetic, hypoallergenic composite material safe for commercial and home use, held in place with heavy-duty removable fasteners for easy and thorough cleaning and sanitation.

CTS-XHP is a very durable, extremely low maintenance stainless steel which can be considered either a high hardness 440C stainless steel or a corrosion-resistant D2 tool steel. CTS-XHP is intended to be used at 60/62HRC for specialty knives where the alloy's fine carbide distribution can be used to produce a keenly sharp cutting edge. In addition, the composition of CTS-XHP alloy has been balanced so that it can attain a minimum hardness of 60HRC when air cooled from hardening temperatures of 1,850° to 2,000°F (1,010° to 1,093°C) and is thus more forgiving during heat treatment than similar alloys. CTS-XHP resists corrosion in normal domestic environments and very mild industrial environments, including many petroleum products and organic materials.

Excellent fit and finish with an equally excellent steel
I used it immediately upon unboxing and found out that the factory edge although sharp tends to slide when cutting ripened tomato skins. So I reprofiled it to around 10-12 dps and gave it a toothy 800 grit edge. The steel was suprisingly easy to sharpen which very similar to my VG10 kitchen knives and it is amazingly tough that it can support very low edge angles without chipping. It now slices like a beast in the kitchen! I really like the wear-resistant property of the steel which enables me to slice pork skins all day without needing steeling or touch-ups like what I experience with my other knives. What is good about this steel is that you can put a very polished as well as a toothy edge to it. Compared to my other Japanese santokus, I find this a bit hefty and thick behind the edge but I wouldn't necessary call those cons. The weight assists in some chopping tasks and provide a feeling of being robust and premium when handling the knife. I find the spine thickness more effective when splitting watermelons and squash.I just wish that it came with some kind of sheath or saya though. But excellent workmanship all in all.
