Superb Quality Canning Knife
I have been looking for this knife for years. My grandfather used to work in a canning factory, so these knives were around throughout my entire youth. I was dismayed when one of my children broke the last one. They had lasted at least 40 years. I use the knife for cutting hard vegetables such as carrots and potatoes, skinning tomatoes, cutting through gristle on beef...just about anything. Although they are remarkably sharp, we have rarely cut ourselves with them. The size of the handle allows one to grip it for a long time without the hand becoming tired. The quality of this knife is unsurpassed. There is nothing it won't do.

Ontario canning knives
My daughters and I have always looked forward to the annual shipment, as we were introduced to the cannery knives, as they were known at our house, by my children's grandmother, who used to work in California canneries. We liked the size and weight and the way they would keep and edge. The last time I purchased 1/2 dozen, they were priced at $3.95 each. Imagine my surprise when they topped out at $7.95 each. The bright blue handles on the last purchased ones (2 yrs ago) were a little tending to crack where the metal knife haft was inserted into the plastic handle. The potential crack/craze line is there at purchase and the quality is no better but the priced has doubled. I must say I'm disappointed, but it is too much trouble and expense to return them. Just thought you might want to know.
