The Paysan is an exquisitely crafted folding knife based on the custom creation of renowned knifemaker Peter Rassenti. French for "peasant" or "farmer," the Paysan (pronounced pie-zaan) is, paradoxically, an incredibly sophisticated design. Its uniquely shaped, saber-ground blade is crafted from 4 mm-thick (0.157-inch) CPM-S90V particle metallurgy stainless steel and features a fully accessible Trademark Round Hole for ambidextrous, one-handed opening. The blade pivots on ball-bearing washers for an ultra-smooth action and is housed in a one-piece handle machined from solid titanium—to include its high-strength Reeve Integral Lock (R.I.L.) mechanism. A stainless steel interface in the lock yields a long service life and also functions as an overtravel stop. To keep the Paysan poised for instant access, it includes an hourglass pocket clip configured for right-side, tip-up carry.

Aestheticly beautiful but... This knife is gorgeous but my example has an incredibly weak lockbar. It is so weak that the lockbar will move forward to meet the blade detent. The blade makes for a poor slicer because of its thickness, and I fear it cannot be trusted for hard use because of the lockbar issue. I guess it would have been nice to see this knife go one way or the other. Eather a robust hard use knife, or a dainty slicer. I would say it failed to fill either niche. If you want to but this for light duty use it will serve you just fine, but I feel there are many better options at a fraction of the cost.

Exudes Quality
I've been waiting for this thing for a few months; I discovered it's pending release back in January 2019, added to KC wishlist, and now I've finally had it in hand for a week or so. It's extremely well made, sharp as all get out...I've nicked my finger a few times playing with it and it easily drew blood. The detent is fine; it will not be opening up in your pocket. Wish such a large, heavy blade, it flicks out easily. One motion of the middle finger on the back of the blade or the thumb on the front (two different Spidey flicks...), and it opens up the rest of the way with ease...no wrist movement needed. The pocket clip finish is well made and actually matches the stonewashed finish of the blade pretty well. However, I'll probably be looking into getting a deep carry clip so I don't have the pointy end of the integral handle sticking out of my pocket 1/2 inch.My favorite thing about it is the blade shape. It will be extremely useful for whatever situation you need it in, particularly well suited for food prep. I think it kinda looks like a Spydiechef on steroids. The blade stock is quite a bit thicker though. Definitely a keeper!
