I Coulda' Had a V8
.... But VG-10 turned out to be just fine. I purchased this for my first born. she uses this and a very old Mac knife exclusively. I have sharpened both on a 12in DMT Stone, fine. She had to put her foot down and tell my son-in-law that he could not use this outside of the kitchen. Being an ex-marine, he recognizes good knives. It is not my favorite kitchen knife but if I only had this one, I would be content. It gets very sharp and cuts well.

Versatile, sharp, quality knife
More versatile than Chef’s knife. Used for cutting vegetables, fruit, trimming meats, etc. Very sharp out of the box, but can be sharpened to razor edge. VG 10 steel is easy to sharpen. Now our favorite kitchen knife.
