Pros: Durability, Ease of Use, Effectiveness, Overall Quality
I had some old carving knives I was sharpening to give my nephew, the family pit master (he's been making some wickedly good beef briskets, of late), but I just couldn't get one of the knives to take a decent edge. I tried the Lansky, the Sharpmaker, and finally got it to take a half way descent edge with the Ken Onion Work Sharp. But when I took it to the Sieger Ruby Sharpener the edge came to life. I just sings. Great product for finishing an edge, or maintaining an edge between sharpening. Better than any knife steel or ceramic rod I've ever used. I purchased some of those cone shaped knife steel sharpening guides, so as to maintain the proper angle, and they worked very well with the Ruby Sharpener.The Sieger Long Life Ruby Sharpener is definitely worth the money.
