all I can say of this knives and all Havalon product is that they are excellent and at Havalon work a lot of good guys which put passion in their work. The blade are really really " surgical" sharp ( many brands claim their product as razor sharp or scalpel like or surgical steel but they are not). I work in a hospital and I know the difference between surgical and not and this is true surgical sharp . Strong knife, easy to change blades, very good materials! For experimet it I gave it to a friend of mine who is a butcher and he said he never found a knife so beautiful and easy to use for detailed work on big chunks of meat.

Better than Piranta for pigs
We just did a necropsy on a pig that died in labor ( a vet and myself - I'm a retired "ER doc") and the Edge did a great job. Two days later we skinned out and butchered two 40 pound pigs. One of my friends that helped used his Piranta to start and I used the Edge. After a while he stopped using the Piranta and just used the Edge. He is an experienced pig-hunter and he vows to not carry heavy knives anymore just the Havalon knives. He had been given the Piranta and was surprised how pricy they are, but they are not toys they are tools and good tools are worth good money. I had to keep my eyes on the Edge to make sure it wouldn't "walk" away. Great knife! Great tool! Still sharp after two pigs.
