For slicing, dicing and mincing, it's the all-purpose knife with a deeper blade. Kyocera's premium cutlery line features a stunning Damascus-like pattern on the hand-finished blades. Close in hardness to diamond, these advanced ceramic knives feature the "HIP" (Hot Isostatic Pressed) blades, fired a second time at a higher temperature and pressure for greater density. As a result, the HIP blade offers increased wear-resistance. Moisture-resistant, the 3-riveted handles are made from durable pakkawood. The hand-finished blades are then polished and packed into elegant black presentation boxes. Lightweight and perfectly balanced, Kyocera knives are ideal for everyday slicing of boneless meats, fruits and vegetables.

absolutely terrifying.
This is quite simply the best kitchen knife I have ever acquired. I have had a regular Kyocera Santoku for several years, and it was finally slowing down the tiniest bit. This thing will outlast me, and has more class to boot. I do think the fake Damascene pattern is cheesy, though. Highly recommend using an Epicurean brand cutting board with this. DO NOT EVER USE A GLASS CUTTING BOARD FOR A CERAMIC KNIFE!
