A RIGID BONING AND FILLET KNIFE WITH A RAZOR-SHARP EDGE

The Shun Classic Boning/Fillet is adept at these two key kitchen chores. For boning, the narrow, sharp, curved blade gets in close to the bone, making it easy to separate meat from bone. Even fibrous tissue is no match for Shun's extremely sharp edge. It's perfect for trimming the silver skin from a tenderloin or roast or even making your own cutlets. The narrow blade reduces the drag as you cut against the meat, so cutting is fast and easy. When it comes to filleting fish, the blade's six-inch length is just right to glide through the body of the fish, quickly removing bones and skin. The D-shaped handle provides a secure grip for excellent control.

The Shun Classic line features beautiful Damascus-clad blades and D-shaped ebony Pakkawood handles. Yet behind these handcrafted knives' beauty is function: razor-sharp blades offering top performance. Shun's proprietary high-performance VG-MAX steel, which provides incredible edge retention, is clad with Damascus stainless steel, then ground and bead-blasted, revealing the flowing pattern of the layered steel. Favorite knife
This is my favorite goto knife. That being said this is not a knife for beginners. The point is very sharp and the blade is very thin. The blade is so thin the knife can break rather easy so if you toss your knives in the sink or dishwasher this is probably not for you. If you baby your knives and enjoy a very good knife this is it! I use it for everything, chopping carrots to deboning whatever. The handle is not round but swells out slightly on the sides for a good grip.

Remarkable Knife
This knife is not only razor sharp it is beautiful. Its balance and cutting ability are second to none and perfect for boning and fillet chores. I particularly like the upturned point for boning but be careful, it’s so sharp you need to be aware of it's location at all times. I cannot make any comments about long term use yet but I will when it is appropriate.
