KSVG0004: Shun Classic Pro - Yanagiba 8-1/4"
The yanagiba is, quite simply, the ideal slicing knife. "Yanagiba" means, "willow blade." True to its name, the Shun Classic Pro Yanagiba has a long, thin, "willowy" blade with the traditional Japanese single-bevel edge and hollow-ground back. It is designed to be pulled through the food, reducing loss of the natural juices and creating the cleanest cuts imaginable. The yanagiba is most often used for preparing sashimi, or sliced raw fish, and is excellent for slicing meats and other moist foods as well. Shun offers three sizes of yanagiba slicing knives. This is the shortest one?ideal for slicing smaller roasts and medium-sized fish.
SHUN offers the finest Japanese style cutlery built in their first class manufacturing facilities in Japan. For the true Japanese cuisine aficionado, nothing compares to the scalpel-like precision of a
single-bevel blade. The updated Shun Pro line features the same incredibly sharp chisel edges as in the past and Shun's signature D-shaped PakkaWood® handles, which lend a secure and comfortable grip. The incredibly beautiful graffiti-etched blade is made with high-carbon VG10 steel, which takes and holds an edge significantly longer than other steels. The blade backs are gently hollow ground, creating an air pocket between the knife and the food being cut, so the knife glides through food with quick precision. The wide shinogi (or blade bevel) makes sharpening these knives on a whetstone much easier.
