I used to live four miles from the little Lamson factory in Shelburne Falls. I've been using one of these for years. This is a sturdy all-purpose chefs knife that can take considerable abuse. It is sharp enough to make paper thin tomato slices. It is heavy enough for breaking down a whole chicken. The edge doesn't chip easily and resharpening is easy. The wide blade lets you scoop diced onion off the cutting board and into the pan. The real rosewood handle is non-slip. It shouldn't be put in the dishwasher but when my sister ruined her handle that way the factory replaced it for her for free! Working with such a nice tool makes cooking more pleasurable.
