This is a great tool!
This is the perfect knife for Sashimi and Sushi. It's easily as sharp as a straight razor. Guess you could slice anything with it. It's not flashy, except for the the 12" blade. I got it at Knifecenter a little over a year ago, and I love it.

There are Sushi Knives, and then there are Sushi Knives...
I got this gem to go with the Santoku and Usuba. I love the other sashimi knives I have and have used, but I'm kicking myself a little bit because I could have saved ALOT of money and just got this one!!! My ONLY knock is that it does not come with a true single edge that yanigibas should and usually do come with. This easily corrected with about an hour or so of work on the stones. At 12" it's definitely a showpiece, practically a sword, but it feels like a 9" or 10", holds the edge extremely well, and makes beautifully precise cuts. I would recommend this knife (and the 10" of the same line) to anyone, especially aspiring sushi chefs looking for a high-quality knife to learn the art of sushi/sashimi with. Jason M. C Sushi Chef
