Also known as nakiri, this Asian-style knife with a classic rectangular shape is designed to quickly slice produce paper-thin, especially vegetables without hard seeds.

Great "bang for the buck".
This will easily become your favorite non-pointy blade. Mine came wickedly sharp. The one i have has the "Santoprene" handle. VERY grippy, even with wet hands. I may or may not add a front finger choil past the front of handle, still deciding on that though. Light in hand, razor sharp makes it easy to make paper thin slices in just about anything. I love it. Worth every penny.

One of the Best Knives I've ever used!
These are the lightest knives I have ever used, but don't let the light weight fool you! I go to culinary school and work full time as a sushi chef, these beauties keep their edges really well and hold up to all sorts of use/abuse!!! These are just as good, if not better, than the Sakai's and other Japanese makes that I own and have used. Mercer nailed it with this line!!! I hightly recommend these to anyone looking to try Japanese-style knives, or supplement their collection! Jason M. C Sushi Chef
