MM268610: E/2686-10 San Moritz Elite 10 Inch Chef's Knife
The Messermeister San Moritz Elite 10" Chef’s Knife, also known as a Cook’s Knife or French Knife, is the most versatile knife in the kitchen and thus the most used blade style by professional chefs. The broad bladed knife has a spine which gradually tapers to the cambered, cutting edge and creates a pointed tip. This knife also has a bolster in front of the handle which gradually tapers to the tip. Because of this geometry, this is the one knife that should be well balanced with weight distributed equally between the handle and the blade.
  • The blade is shaped so that it can peel, trim, slice, dice, chop, mince, vegetables, fillet fish, and cut meat. Each part of the knife is designed to perform a different task. It is the flagship of cutlery.
  • One piece, fully forged
  • Hand-polished "Elite" edge
  • Bolsterless edge
  • Ergonomic balance
  • Molded "POM" handle
  • Polished spine
  • Made in Solingen, Germany

Excellent at chopping tough vegetables
I am a chef and have a bit of a knife collection in our kitchen. This has become the new favorite for a couple of us who like a longer knife. It has a nice thick comfortable spine, and bounces up due to to the camber of the blade near the handle. It is a very comfortable knife to use when cutting hard vegetables such as butternut squash, sweet potatoes... It is a thick blade but has nice balance, a little tilted towards the blade. It is my new go to knife for chopping large quantities of vegetables.
