The Messermeister Asian Precision 10" Sushi or Yanagiba Knife knife has a long, narrow, single edge, pointed blade that measures anywhere from 9.5"-12". The most popular blade lengths are 9.5"-10.5" for most home chefs and 10.5"-12" for most professionals.
- The single edged blade is generally used with a pull cut technique and is used to cut (straight or on a bias) raw fish. The long heavy blade allows for a longer pull cut with less pressure, which helps to hold the shape of the fragile raw fish.
