American Handcrafted. This cleaver has high carbon steel blades and genuine hickory wood handles. The blade is tempered and hand ground to retain sharpness, and the handle is flame burnt and buffed for a unique antiqued finish.
First introduced in 1924, the Old Hickory knives are the most venerable product line still in active production. Deer Processing
I bought this knife to process meat for sausage making. It is a hard carbon steel blade so no shiny stainless here. Blade will discolor. But that doesn't bother me. With a little time on a sharping stone this knife is Sharp, and the blade is stiff. For the price I can live with having to use a brillo pad to clean the blade.

love it.
Good looking knife. I like the stamp marks in the blade. The handle is comfortable. It could be a bit sharper but it is easily fixed with a stone.
