I was given one of these knives about forty years ago by a friend who repaired leather goods. He stated that used in the kitchen it was invaluable as a vegetable or paring knife.This proved to be an understatement! It was truly the perfect kitchen tool. It is exceedingly sharp and simple to maintain. over the years I have used them often as gifts and the recipients have been unanimous in their praise.Cannot imagine a cook without one or more of these. Fine instruments!

Unconventional use
I use the knife in the kitchen. It is the best vegetable knife I have ever used. I know it's not meant for this use. But it can slice a tomato see through thin. My father worked in a tannery. That is how I was first introduced to this knife. As kids we always used them for vegetable knifes and the best of the best kitchen knives on the market don't come close in comparison. The only fault is because I use it in the kitchen it must be hand washed and dried immediately because of the blade finish. Worth it by far!
