Pretty average knife
After hearing all the hype about these knives, I decided to purchase one...I was disappointed to say the least. The only thing I couldn't fault was the handle, it's just such a nice fit and feels great...but the blade it's attached to despite the low price to begin with is over priced, it's not much better at cutting vegetables then my meat cleaver. My Dexter Russell knives with a 20° edge vs the Victorinox's 15°, performs better. The Victorinox struggles on tomatoes and you can hear the cells breaking when you cut. Slices are therefore thicker and less even with more food damage. Any Japanese knives will absolutely blow this out of the water as far as cutting performance goes, I rate this very low. It will get the job done but it's going to require extra effort and it's nowhere near as pleasant as using a quality knife. It's not even a cause of poor edge durability on this knife, it just won't take a sharp edge period. If you look after your knives and don't cut hard products then I highly recommend getting a knife made with VG10 steel, I.O Shen are amazing...Stay away from Shun, they chip at the sight of food. Great Chef's knife!
We were looking for a good knife with good sharpness and comfortable handle. We saw this knife reviewed on Cook's Country Test Kitchen and the superior rating they gave. That convinced us this was the knife we had been looking for. It lives up to it's rating!

Super quality at a reasonable price
The Victorinox Forschner 8" Chef's Knife is a quality product that is relatively inexpensive. This item excels at all of the tasks involved in the preparation of meats and other foods. The knife is comfortable in the hand and the blade is somewhat heavier than other knives I own. I was able to achieve an excellent edge after a little sharpening with a fine grit stone. I would highly recommend this product to anyone wanting a "top quality" chef's knife at a reasonable price.
