Applicable to myriad butchering tasks large and small, the cimeter is commonly used for portioning larger cuts of meat, and the sharp, curved blade allows its user to trim meat closer to the bone.The thermoplastic elastomers (TPE) handle is extremely flexible over a wide range of temperatures, very strong and benefit from good impact and notch impact strength, even at low temperatures. TPE materials can be used at temperatures of up to 80-110 °C.

Meatcutter Tested.
I cut meat for a southern california chain grocery store. We do tonnage. This is a comfortable knife. A little heavy if you're a small guy for extended use, but is my main breaking knife. A lot of knife to sharpen down. Years of use.
