I've been using Wüsthof and Henckels kitchen knives for years, but started getting tired of sharpening them all the time. I decided to give these Bokers a try since the steel is a known quantity, and became an instant fan. The knife came scary sharp out of the box, and stayed that way for months. My wife is notoriously hard on blades, and I typically have to sharpen the Wüsthofs after every use. This is not the case with these 440C blades. She's been abusing them for over a year now, and I've only had to do a minor touch-up. Afterward they're scary sharp again. The handles are also very, very nice. Very comfortable, easy to clean, and provide excellent grip. I'm extremely happy with these knives, and I can't ever see myself going back to Henkles or Wüsthof. They might not be as stainless as the others, but the comfort and edge retention completely blows them away.
