Boning Knife Pro
Since I process my own game, I thought this would be something I could use. Not for field dressing, but boning as the name applies. As luck would have it, my wife and I harvested both our elk this year again. I will say that this is the best knife I have ever used to remove the Tenderloins from inside the rib cage. It made the fastest and cleanest cuts next to ribs I have ever done. It has the perfect shape and feel for this. It also preformed well in separating the gristle from roasts. In my hands, separating roasts from bone, it was average and I found the Moose Skinner better there. The edge held up very well.
