I have used some kind of cleaver during all of my 35+ years of cooking. I bought this product to replace an aging everyday cleaver which means it does every kind of cutting in the kitchen except cutting through bones. This product is amazing. It's exceedingly sharp, slices oranges without losing any junce. It's capable of slicing paper-thin meats required fire-pots (chicken, beef, pork). I am being very careful when I use it because I don't want to unintentionally slice off bits of my fingernail! One precaution about storage: Whereas I used to 'air-dry' my old cleaver and leave it in the drying rack, I find it best to wipe this one dry and store it if I want to retain the super-sharpness. Overall, an excellent product!
