Great steel
The Schrade 167UH steel has improved leaps and bounds since the old made in USA models... The steel is easy to sharpen with a ceramic stone that results in a razor edge.... Great price value..... Excellent job Taylor!!!!!

When heading to the coast, this knife was one of the first things packed. It was my husband's favorite, but I acciidentally I broke his first Uncle Henry when I twisted it in a watermelon. I was so happy to find a replacement for the treasure one! Our Christmas turkey and ham were both sliced so thinly thanks to this new Uncle Henry and my husband's patience! It really is a great fillet knife in addition to a carving knife!

This is the taylor cutlery version of the orginal uncle henry fillet knives which my dad owes and has used for 25 years. If this one makes it that long ill be a beleiver

Best field fillet knife ever!
Ok so I received this on friday and used that as an excuse to go on a fishing trip out of a local cattle boat ocean trip. We had a great time and caught a multitude of various keeper fish ranging from 1/2# to 8# fish. When the deck hands started to clean the fish on the trip back I asked the guy cleaning my fish to use my knife. I explained why I wanted him to use my knife, for this review, and he thought it was a great idea. Initially he thought that the blade didn't have enough width and that it would not have the backbone to get through the bigger fish. He shortly changed his mind. In fact he asked to use it to clean the rest of the fish on the boat. I love this fillet knife, I will be buying more to put in various tackle boxes and hunting packs.

Nice knife
I like the knife because I own 2 of them and wanted a few more. I use them for cleaning fish and butchering deer. They keep a good edge and I like the feel of the handle. I have given a few away for Christmas presents also.
