H34892173: EUROLine Bob Kramer Stainless Damascus 6.5" Nakiri Knife

Zwilling J.A. Henckels

This finely crafted Nakiri knife mimics a Japanese cleaver shape and features a wide, ultra-sharp blade that’s ideal for prepping everything from veggies to meat to fish. This knife, designed for Zwilling by master bladesmith Bob Kramer, is the perfect fusion of Eastern and Western knife designs. It’s a sturdy knife created for just about everything in the kitchen, but most especially for chopping, slicing, and dicing vegetables. The shape is uniquely suited to two-handed cuts through fruits and vegetables with tough rinds, such as watermelon and winter squash.

The Kramer by Zwilling EUROLine Stainless Steel Damascus Collection features stainless steel blades made to his exacting standards, maximizing curves, balance, and utility. These knives are hand-finished with a traditional 3-step process by skilled Japanese artisans. Combined with the SG2 micro-carbide powder steel, the ice-hardened CRYODUR blades deliver scalpel-like sharpness, stay sharper longer, and can withstand more sharpening over their lifespan. The SG2 super steel core is protected by an exceptionally beautiful 101-layer Chevron Damascus pattern, which is complemented by a stunning black linen Micarta handle and signature Bob Kramer mosaic pin.

Knife Center has an excellent selection of kitchen knives, kitchen accessories, cutlery, and kitchen gadgets.

Cons: Durability
Worth the investment; requires care and feeding
I have owned this product for about 6 months. I have used it regularly in my work as a prep cook. I prep hundreds of pounds of carrots, onions and ginger by hand every week. A note for people early in their culinary knife journey: this knife is “fragile” when compared to the knives you will find commonly in an industrial kitchen setting. You don’t want to put it in the dishwasher and you definitely don’t want to cut anything but vegetables with it. If you’re using this knife in its wheelhouse and cutting vegetables with proper technique, it is hard to find a better experience. If you can 1.) avoiding any twisting of the knife when the blade is in contact with the cutting board 2.) wash the knife by hand with soap and water 3.) dry the knife completely before putting it away, and 4.) learn about how to properly sharpen/maintain this type of knife—or pay a professional to do it for you—you’ll have lifetimes of service from this tool. It genuinely makes my time in the kitchen more enjoyable. This was an awesome Xmas gift from my amazing wife. It is a Ferrari for the cutting board. I always enjoy using it. If you don’t mind the care and feeding, you’ll love this knife. “The quality remains long after the price is forgotten.”
