Renowned knife designer Jens Anso takes up his wooden spoon and drawing board and conjures up a full-bodied menu of the finest chef's knives for gourmets with the MKM Prima series. The versatile gyuto is a typical Japanese kitchen knife for preparing vegetables, fruit, fish, and meat. It is often compared to the European chef's knife because of its similar dimensions. Compared to the better-known Santoku, the Gyuto has a longer and narrower blade, which is particularly beneficial for the precise cutting of large items. In this version, the MKM Gyuto is equipped with a cutting blade made of X50CrMoV15 with a hardness of 55-57 HRC. Typical Anso is a handle made of olive wood, which eliminates the usual conventions in favor of modern, angular lines.

Pros: Construction, Design, Material Quality

Dull
I work in a fine dining kitchen and I use knives a lot. Anyway, it is came out of the box very dull. I got a little bit of edge on it today but didn't have enough time. Bummer. I was excited because I have two MKM folding knives which are great. Whatever, lots of things are disappointing these days. Haha?
