Superior Knife, For Less.

This knife was originally bought as a gift for my mother. I one evening borrowed it for work, in a kitchen doing prep. Its glorious on all accounts. Its sharp, handles well, sharpens with little effort. Case has created an excellent piece of equipment here. I came imagine walking into a kitchen without it. I prefer it over Wustoff, Shun, Victorinox, or any expensive name brands. Its worth every penny and then some.

Great knife

Knife is very sharp and well made. It should last me forever. I use it for chopping veggies and meats. Very pleased with it.

Glad there are still producers of good kitchen knives in USA

This knife was bought as gift at my father’s request (he actually cook extensively) of a kitchen knife made in USA for his collection of working knives made in various countries. I am glad there are still producers of good kitchen knives in USA although their products are terribly hard to find. My father liked it (that’s tough for a tool), after use I recommend it. I plan to get one for me, at least to show it to my Chinese colleagues :).

Great gift for cook off team members

The fit and finish are excellent. The knife comes out of the box sharp. The balance is good for minor small work. BBQ Cook off member who I bought it for said it replaced his current main knife as soon as he used it the first time.

Case XX Stainless Hollow Ground Chefs Knife

I will not flatter myself for buying these kitchen knives. I will flatter Case & Company for their choice of materials in constructing these knives. I have been in search of kitchen knives that are sharpen able and that hold a razor edge. These Case XX knives replace many common brands the you would know both domestic and foreign that I donated to charity when these arrived. Knife steel cannot be seen, one must first sharpen and then use to experience these two qualities.

Cons: Design
I got a gift for a class on knife use in the kitchen. After that I wanted a chefs knife but made in USA. They are out there but this knife by case was more affordable. Super sharp out of the box. Handle is a little clunky but it's wood so can be sanded if it bothers you. Wish they made it in a ten inch...that's just my personal preference. The base of the blade has no hilt so no finger rest but this allows You to sharpen the full length of the blade. I would recommend this for any none professional chef.

case as usual comes thru

this knife is great and fairly priced! the 8" chefs knife is the most important one ib the kitchen this is a minimalist tool with no places for food to collect , the wood in the handle like all wood has an anti bacterial element that molded knife handles can't match (bacteria grows in the scratches ) and a great edge . the knife is well balanced but just a tad light (but in no way flimsy ) if i had my way the back would be thicker as this part of the knife is sometimes used for pounding and tenderizing fillets but i was so delighted i ordered another one to have as a reserve .
