Yaxell Japan 9" Bread Knife
The Yaxell Dragon bread knife is well made and sharp, with excellent fit and finish. The CTS-BD1N steel holds and edge better than most steels used in kitchen knives & is rust resistant. I haven't needed to sharpen the knife, so I don't know how difficult that will be with the serrated blade. Unfortunately, the Yaxell Dragon knives that are made in Japan are no longer being produced and are limited to old stock on hand. The Apogee Dragon Classic knives are made in China and the examples I have seen are not of the same quality. If that makes a difference to you, be sure the knife you purchase is the Yaxell Dragon knife made in Japan.
