One Of My Favorites
I've been working in kitchens for more than half my life now. I've worked with and handled what must be hundreds of different kitchen knives throughout my career. My personal collection of kitchen/ chef knives has become quite extensive over the years. My knives range in price anywhere between $10 and $500+. When I was younger my mom bought me this Global G2 as a gift, when I was hired to work in a very high end kitchen. This knife has never left my bag since and it has never let me down. Not only have I personally used this knife extensively for years, but I've also lent it out to dozens of young cooks and chefs throughout my career who were in need of a good knife for the day. It's sharp and holds a wonderful edge. It's easy to sharpen and hone. It's extremely easy to clean and keep clean. It doesn't rust or patina (which some of my other favorite knives do) I've dropped it dozens of times and it's never chipped or bent or broken in any way. It's very well balanced and comfortable in the hand. The weight and size are perfect for pretty much anything you would want to do with a chef knife. I really just have nothing bad to say about the Global G2. If you are looking for a robust, reliable, low maintenance, high performance, professional chef knife that won't cost you an arm and a leg, I really don't think you can do much better than this one.
