Excellent Fish Fillet Knife
I have been using my Kershaw 1257 fillet knife for two years with great results. The knife came razor sharp and has only needed to be sharpened once. The knife has always been rust free. A few strokes on a 600 grit and 1000 grit stonebrought the blade back to new. Kershaw makes quality knives. I am mostly a trout fly fisherman with keepers (i.e. eaters) ranging between two and five pounds. Cleaning and preparing is easy. Larger saltwater fish like a 20 pound striper are at the high end of where I would use this knife.
