Special occasion slicer
I’ve used this for a large brisket and look forward to using it for a large ham. It’s a “special occasion” knife because it works great with large cuts of meat that come into play with a larger gathering. The size of the blade will allow you to cut through a piece of meat in a single pass instead of going back and forth creating a stair step effect. This was perfect for brisket but I know it will work great for a large ham and turkey too. My only complaint is the cost compared to “high carbon steel” alternatives on Amazon. I would buy this again because it just works so well with any size meat in has remained sharp. Knifecenter says this is AUS-8A in the Specifications, but I think this is wrong. The Knifecenter description and the Shun web site indicate AUS-10A. It’s a full tang with a great handle material. I would buy it again but the only reason I gave it 4 stars is because I wish it was less expensive.
