This is my universal go-to. Always sharp, with excellent balance, and an ability to quickly accept an edge this is a must for any kitchen. The size is big enough for large cutting and light chopping tasks, but with a nice point and a smooth slice it will also take apart any soft skinned vegetable with ease and precision. I almost forgot, with these attributes is fun to use as well!
