sharp, light, handy

Small enough to be handy for all tasks, and yet still large enough to carve a turkey. The VG10 core is phenomenal. The 420 shell scratches easy, but that's ok. There wouldn't be any good purpose to laminating such a thin blade together if both parts were going to be hardened fully.

Great!

I had to explain to my girlfriend why I spent so much on a knife. Once she used it to cut vegetables she called me right away. You do not have to put any pressure on the knife to cut, also the slight curve in the blade makes it chop great. It really is amazing how sharp the knife is. I have not had to sharpen it yet.

Shun chef knife

Loving this knife! I like that it's light and thin and very, very sharp-- perfect for a good all purpose chef knife. I'm not too impressed with the handle -- it doesn't seem to match the quality the rest of the knife shows, but I guess for the price, one must make a concession somewhere. It seems durable, though, and I suspect it'll never get any worse. Overall, I'm very pleased -- I didn't really expect to get a knife this good for this price.
