One of the finest cook's knives I have ever used

I do all the cooking in the house and we like to eat about 7 days a week. My wife and I bought one of these a few years back and I really began to use it daily about three years ago. The knife is a truly well-designed cook's knife, with an excellent balance, the curvature of the edge offers an excellent rocking and chopping action, and the taper of the handle to the blade allows me constant control of the knife whether I am slicing scallions or cutting a frozen chicken thru the breastbone, body and spine. I'm not classically trained, so I can't comment on how a professional chef would like this knife, but as a guy who uses it to make 7-10 meals a day, I can't recommend it enough. It maintains an edge very well and I am that guy who keeps his ez-lap bench hones as well as a sand/ strop block in the kitchen drawer, so I can attest that it takes a very scary edge easily and simply. By scary sharp, I mean the hair falls off my arm and it maintains this level of sharp for a couple weeks of solid use at a time. It''s a worthwhile investment of $115 and shipping - the only other chef's / cook's knife I have used which comes close in terms of how well it performs are the Shun/ Bob Kramer knives at 3 times the price.
