Hands down --- this is the best knife I have in my set. It is the first one I grab anytime I am processing and need to cut . It is a perfect size and hand fit for me . It is thin and moderately flexible in the blade , maintains it sharp edge well and can be re- sharpened quickly with only a few strokes of the dressing steel. I use it for cutting meats and vegetables .
