Quality steel and excellent kitchen utility
Very practical kitchen utility knife. Excellent slicer. I use it to cut up fruits and vegetables and it outperforms all my other kitchen utility knives. I have both the straight edge and the serrated versions and, frankly, there isn't much difference in day-to-day use between the two even though one has a pokey point and straight edge, while the other is serrated with a rounded point. The blade is quite thin and slice-y., and for that reason more flexible than similar knives, but that is a minor drawback. Finally, why is there no information on the HRC hardness for these blades? And why is HRC info disappearing from manufacturers' and retailers' knife specs?
