Veggie-lover’s delight

This nakiri has been my main kitchen knife for almost a year now, having superseded the cheap Cuisinart chef knife I got when I moved into my own place for the first time. I’m very happy with it. Murray Carter’s design is a pleasure to hold and to use. The handle is supremely comfortable in an overhand pinch grip, and perfectly balanced. The subtle upward curve at the front of the edge is great for initiating a cut, and makes the knife useful for rocking cuts as well. The blade stock is exceptionally thin, which means the knife will continue to perform even if you slack a bit on sharpening. Spyderco’s choice of BD1N stainless for the blade is tough enough to support the thin edge. Combined with the G-10 handle, it makes this a very low-maintenance knife. My best friend is a Japanese pro chef. I think he was a little skeptical about this knife when I told him about it, but when he held it the first time, all he could say was, “damn, this is really nice.” That should tell you everything.
