Uber chef's knife
This is my second of these knives, and I purchased it as a back-up. Knife is light in hand with an extremely thin/sharp/efficient edge bevel. Handle is just soft enough to offer a comfortable grip in all positions for prolonged use and cleans up quickly with soapy water, no apparent residue. I would rate this knife A+ for general kitchen use on vegetables, both soft and fibrous, as well as carving meat, both raw and cooked. It hasn't replaced the other chef's knives in my kitchen--they're still there in the block--but I have not reached for anything but the K2 in years, except for a long, serrated bread slicer on occasion.
