My most valuable blade
If I could only own one knife, this would be it. I have probably spent more time using this knife than any other blade. I use this knife for almost all of my food preparation. For me, It hits the sweet spot in edge retention vs. ease of sharpening. After fifteen years of regular use, this knife still preforms like it did when it was new. A bit better than new actually. The factory edge is good, and you will be able to cut through miles of meat and vegetables before it “needs” to be sharpened, but anyone willing to give the edge a little TLC can improve is performance. I’m sure there are other chef knives worth considering, but I have never regretted buying this knife or been tempted to replace it with something else. If I ever lost this knife I would buy the same model again without hesitation. I short, I have enjoyed using this knife and think you would enjoy it also.
