Shun Shiranami blades use a combination of VG10 and VG2 stainless steels layered into a flowing wave Damascus pattern. This dual-steel construction provides long-lasting edge retention, excellent corrosion resistance, and strong slicing performance.
What are the handles on Shun Shiranami knives made from?
The handles are made from Prussian blue jute Micarta with a contrasting white spacer. The material features a fine burlap texture that is polished smooth yet becomes naturally tackier and more secure to grip when wet.
What edge angle does the Shun Shiranami series use?
Shun Shiranami knives are factory sharpened to a 15-degree angle per side. This fine bevel creates an extremely sharp edge that glides cleanly through food with minimal resistance.
