Favorite “go to” knife
I’ve had my Chicago Cutlery 8" Chef Knife for more than 30 years, from when I first started cooking professionally, and then just for the family. I’ve had many a joke made about it because I do own so many different brands, and that’s where the jokes came from. I learned early on, not early enough for me though being a value vs status buyer/user of knives, and I could have saved so much money NOT buying most of the popular names and sticking with the Chicago Cutlery knives.    One, you can sharpen them yourself very easily and well. Two, they stay sharp longer than almost anything I’ve used, and you can find the right “feel” for the edge angle that works best for you. And three, they last and age better than the other brands, and I mean all of the high end ones as well as anything in between. The only con for them in my opinion is that it’s hard to find the same knife you need to replace because after 30  years or so, they might not have the exact same knife you’re needing to replace.   I’ve got 4 knife blocks and at least one drawer that I keep my knives, the drawer knives are kept with a paper or plastic edge protector on them, and I have the Chicago Cutlery knives where I can get to them quickly, in the blocks on the counter with my self-made wood cutting boards, and can usually restore them with a few passes on a ceramic rod and not need to use a whetstone on one for at least 4-5 times after I use the ceramic rod on one.   This is my experience with Chicago Cutlery knives, I’m not getting paid for this post, nor was I asked to give them a good review, I just think that if you believe in a product, have great experience with it, then you should let others know how good they are, and maybe someone can save some money by reading about your experience, and not have to buy something that will end up in a drawer and get the best product without having to spend a bunch of money to find out that they could have saved it, and gotten the right product in their first try.
